L’ Invention de la Cuisine-Michel Bras

Another one in the series put out by Paul Lacoste about one of my favorite chefs. I am so enamored by the sense of place that is Chef Michel’s food-so subtle and controlled yet powerful in its statement. His presentations set the standard for how modern haute cuisine looks and his understanding about source and composition is unparalleled. I think that’s only really possible if you exist in a place with minimal distractions. I hope he stays involved til he no longer can-like Jiro. Its important for the world of food that this aesthetic is kept in conversation.
